Our extra virgin olive oil contains natural plant polyphenols like hydroxytyrosol, tyrosol, and oleuropein.
We use tested and proven biodynamic farming techniques at our Sandia Creek farm to achieve the highest polyphenol levels in our olives. These techniques increase soil health, feed micronutrients to trees, and ultimately increase polyphenol content. For instance, we use:

- Balanced pruning: Effective pruning allows the tree’s canopy to open up, enabling more sunlight to reach the olives, and facilitating better airflow. The sunlight is good for photosynthesis and encourages the production of secondary metabolites like polyphenols. (244)
